Today I am sharing with you one of my favourite Easter Recipes which is a great one to make with the kids this Easter. As kids we made this every year with Mum and now Mum is making it as Grandma with my kids. It is the favourite marshmallow bunny rabbits! It is so so easy, a bit messy, but loads of fun and it looks great! (and tastes great too!)
The moulds we use are the d.line baby bunny moulds and the d.line big daddy mould. You can get the moulds at www.kitchencupboard.com.au, or you should be able to find them in your local kitchen shop. (or contact the company that supplies them and they should be able to tell you who sells them in your local area www.donaldson.com.au.
To make -
1. Dissolve 2 dessertspoons of gelatine in 1 cup of boiling water
2. Dissolve 2 cups of white sugar into this mixture and beat (with hand beater or mix master) until thick
3. We always made it white so no need to add colour, but if you want to make them a colour, add the colour now
4. Poor into lightly greased bunny moulds
5. Put in fridge to set
Increase mixture (double or triple quantities above) to suit the number of big and small bunnies you are making.
1. When set, roll bunnies in coconut
2. Then paint (using food colouring) the outline of the ears in yellow, eyes in blue and their noses in red
3. On the big bunny then paint the outline of the legs and tail in yellow
4. On the baby bunnies paint the outline of the tail in yellow
5. Finally make some grass! Put some coconut in a bowl and add 1 or 2 drops of green colouring and rub through with fingers
6. Sprinkle the grass on a platter, put the bunnys on the grass and spread little easter eggs around
